Grapes don’t grow like corn, rather the grape vine has to be pruned, trained and carefully tended through more than the half of each year until the grapes are ripe and can be picked. This needs to be learned and practice makes perfect, as Gut Hermannsberg’s vineyard manager Philipp Wolf will tell you. A healthy vineyard with healthy soil is not a mono-culture, rather a complex eco-system of which the vines are only a part. The cultivation methods used must always keep this in mind.
