Temperature

All biological and chemical process are temperature dependent and for this reason our cellar team is always watching the outside temperature and the temperature of the wines in the cellar. If the temperature rises than it is like the driver putting his or her foot down on the gas; everything accelerates. The end of the 2019 harvest was a perfect example of this. Suddenly the temperature leapt more than 10°C / almost 20°F and the rate of grape ripening more than doubled overnight. The entire team had to run, run, run to get the grapes all in before they were overripe. Thankfully it all worked out beautifully and this is our best vintage since 1989.
