Contains Sulfites / Sulfites / Sulfur
The addition of sulfites strikes many consumers as being unnecessary chemistry in wine, and is sometimes also assumed to be the cause of headaches after drinking wine. However, wine as we know is wouldn’t be possible without the added sulfites, because it would then quickly oxidize and/or go off. Sulfites perform antioxidant and antiseptic roles in all wines except in some types of natural wine to which no sulfites are added. At Gut Hermannsberg we add enough sulfites to guarantee the wine is clean and is capable of long aging. The medical facts are clear: only 1% of the population has a heightened sensitivity to sulfites, so they are rarely the cause of headaches after drinking wine. The quantity of sulfites in wines like ours is also much smaller than in, say, a restaurant salad bar, packet potato purée or orange colored dried apricots. The addition of sulfites to wine is nothing new either, having been legalized in Germany in 1497. Sulfur is one of the six elements absolutely essential for all forms of life. For example, your skin is mostly composed of the protein keratin and derives its strength and elasticity from the disulfide bonds (sulfur atom to sulfur atom) in the keratin molecule!
