Cellar
Most modern cellars are above ground structures, often resembling light industrial units more than historic underground cellars, and they need insulation, plus heating and cooling equipment in order to function. The latter are even more important (and costly) for industrial scale wineries where huge wine tanks often stand outdoors and can look more like oil refineries than wineries!
At Gut Hermannsberg we are lucky to have an extensive complex of cool underground cellars with an ideal climate for making white wines. In the cellar we use some modern equipment, but follow the practices of the estate’s winemakers in many respects.
However, as our winemaker always says, “dogma is not our thing!” and we therefore use both stainless steel tanks and wooden casks for winemaking.
