Cask

In the 21st century the most common type of cask in which wines are fermented and matured is the stainless steel tank, and that’s also true of Gut Hermannsberg although there are also many oak casks in our cellar. These are almost all Halbstück and neutral, meaning that they don’t impart oaky aromas and flavor to the wine. We prefer them to barrique casks that do give the wines an oaky character to the wine. In recent years the ancient clay amphora has seen a renaissance, but we don’t think they are suitable for our style of wine and they have no tradition at Gut Hermannsberg.
