Bottling
Bottling is the least romantic part of winemaking, but if something goes wrong at this point then the result of at least a full year’s work can be lost! At Gut Hermannsberg the timing of bottling varies greatly. For our Gutsweine / Estate Wines bottling normally begins in March following the harvest, because we want to capture all their fruit and freshness. Our 7 Terroirs and Ortsweine / Village Wines need half a year of maturation on the lees (yeast deposit) before bottling in April, and for GG wines bottling is in August one or two years after the harvest during which time they remain on the lees in cask. The process of bottle aging begins with bottling and for your wines it can last anything from a couple of years to a century or more.
